Broiled and Baked Steelhead Trout Fillets

Ingredients

  • 1 steelhead trout fillet, with or without skin
  • 1 tbsp. Pietro's Favorite Lemon Flavor Olive Oil
  • 1 tbsp. fresh lemon juice
  • 1 tbsp. lemon zest
  • 1 clove garlic, finely minced
  • 1 ½ tbsp. chopped fresh rosemary
  • ¼ teaspoon salt
  • ½ teaspoon freshly ground pepper

    Step 1: 

    Preheat broiler

     


    Step 2: 

    Line a baking pan with foil then brush with olive oil.

     


    Step 3: 

    In a bowl, stir together 1 tbsp. of olive oil, lemon juice, lemon zest, garlic, rosemary, salt and black pepper.

    Step 4: 

    Place fish, skin side down, on baking sheet then brush with olive oil mixture.

    Step 5: 

    Broil trout on the second rack away from heat source until fish is seared, about 5 minutes or less. Note: be careful not to burn herbs.

    Step 6: 

    Turn broiler off and over on to 325 degrees. Carefully move baking pan to third rack down and bake fish until cooked through in the thickest portion, about 10 minutes more.
